The Rickey In a highball glass squeeze the juice of 1/2 lime, drop it in the glass and add: 1 1/4 oz. (35 ml.) Spirit or 2 oz. (56 ml.) Liqueur or 2 1/2 oz. (70 ml.) Fortified Wine or Wine Fill with ice Top with club soda Decorate with a stir stick.

The Smash In an old fashioned glass add: 4 sprigs of fresh mint 1 teaspoon fruit sugar 1 tablespoon water Crush the sprigs until the sugar is dissolved. Fill with ice and add: 1 1/2 oz. (42 ml.) Spirit or 2 oz. (56 ml.) Liqueur or 2 1/2 oz. (70 ml.) Fortified Wine or Wine Decorate with a sprig of fresh mint, 1/2 slice of orange, a lemon zest and a cherry skewered with a pick.Top with club soda.
